This easy coconut rice only requires 5 ingredients and 20-ish minutes. The perfect side dish for stews or curries!

Ingredients
- 2 cups Premium Delicious Jasmine Fragrant rice
- 2 cups coconut milk (480 ml) (Grate or blend dry coconut and sieve)
- 2 cups water (480 ml)
- 1/2 teaspoon salt
- 1/2 cup carrots – chopped
- 1/2 cup peas (frozen peas – thawed and rinsed)
Instructions
- Combine water, coconut milk and salt in a pot on medium heat. Bring to a boil.
- Add Premium Delicious Jasmine Fragrant Rice to boiling liquid. Cover and let it cook until the rice absorbs all of the liquid. This takes about 10-20 minutes.
- Add chopped carrots and peas then fluff rice with a fork.
- Turn off the heat and enjoy with any stew of choice.
